Bittersweet Truffles

Purchase holiday paper tops or mini foil candy cups to add to the presentation and choose the type of coating you’d like to have on hand when it’s time to roll the truffles. Dark cocoa, shredded coconut, peppermint flakes and finely chopped nuts are just a few of the most popular coatings.

Ingredients

  • 8 ounces finely-chopped bittersweet chocolate
  • 1/2 cup of heavy cream

Directions

Place the coatings you have selected in a small bowl and put aside. The chocolate should be added to a medium-size bowl.

Add the cream to a small saucepan and bring to a boil over medium heat. Pour the cream over the chocolate, let sit for approximately 3 minutes and then whisk the mixture until it is smooth. Put this chocolate mix in the refrigerator for about an hour until it becomes firm.

Spoon 2 teaspoons of the chocolate mixture in mounds onto a baking sheet that has been lined with wax paper and refrigerate for 15 minutes. Remove from the fridge and roll the mounds with your hands into balls. Roll the balls and press them firmly into the desired coatings until completely covered. Place them back on the cookie sheet and then let them set in the refrigerator for about 1/2 hr.
