1/4 cup Dried Apricots
diced

2 tbsp Agave Nectar

1/4 cup White Balsamic Vinegar

1 tsp Garlic Powder

1 tsp Sea Salt

Cover and refrigerate for at least 4-8 hours before serving.

In a food processor or handheld blender, combine the peach puree, cucumber, yellow bell pepper, apricots, white balsamic vinegar, agave, garlic powder and goat cheese.

Blend until smooth. Seasoned with salt and pepper to taste.
