Strawberry Orzo Pasta Salad in Sorghum Vinaigrette

1 cup Orzo pasta

2 tbsp Red Wine Vinegar
- •
2/3 cup Olive Oil
- •
1/2 tsp Salt
- •
1/2 tsp Black Pepper
- •
1 tsp Sugar
- •
2 tbsp Pistachios

Make the vinaigrette. Combine, sorghup syrup, olive oil, red wine vinegar, dijon mustard, sugar, salt and pepper in a mixing bowl and whisk to combine. Set aside

In a pot of boiling water, cook orzo for 8 minutes or until al dente. Drain and let it cool.

In a large mixing bowl, add the orzo pasta, sorghum vinaigrette, pistachios, red onion and arugula. Toss until combined.

Garnish with feta cheese and enjoy!
